About this place
A hallmark of Morioka reimen is the lively, resistant chew felt the moment you lift a mouthful, followed by an exceptionally smooth slide. At Pyonpyonsya Te‐su, situated on the 6th floor of Tokyo Solamachi, thick noodles are pressed fresh through the noodle machine for each order, plunged into iced water to tighten their structure, and served with that fresh, formidable bite. The chilled, clear broth draws deep richness from a simmering of beef bones and seasonings, keeping the palate crisp while delivering satisfying depth. Diners can select their spice level from four tiers: betsukara (kimchi served on the side), medium spicy, extra spicy, or fiery. Opting for betsukara lets you appreciate the clean essence of the broth first before stirring in the kimchi's bright acidity and heat as you eat.
Hearty sets with sizzling meats and crisp chijimi
While a single bowl of cold noodles makes a rewarding meal, pairing it with Iwate-focused meat dishes turns it into a feast. Alternating between piping-hot, aromatic grilled cuts—such as Platinum Pork kalbi or Japanese Black wagyu kalbi—and refreshing slurps of chilled noodles creates an effortless rhythm. Other highlights include the herb samgyeopsal set, featuring Platinum Pork scented with your choice of rosemary, curry, or salt and pepper to wrap in ssamchu lettuce, and the negi nira chijimi, fried crisp and fragrant on the outside with a comforting, chewy center.
Korean-inspired comforts from warm noodles to bibimbap
Beyond chilled noodles, comforting heated broths offer warmth on cooler days. Options include the fiery yukkejang warm noodles, brimming with simmered meats and vegetables, and Morioka warm noodles, which highlight the mellow savour of assorted greens. Rice dishes are equally inviting, from stone-roasted Jeonju bibimbap with its tempting crust of crisped rice at the bottom, to the "Choy Plus" add-on that lets you complement your noodles with a mini bulgogi rice bowl.
Spacious, casual table seating makes the restaurant an easy stop during a day of shopping or sightseeing around Tokyo Skytree, welcoming lunch and dinner guests alike. Whether dining solo or gathering with family and friends, guests can settle in for a taste of Iwate centered around these distinctively resilient noodles.
